Wine making
Method: cold maceration of the grape skins while the must is at a 10°C temperature for 10 hours. Subsequently clarification takes place and then the yeast is inoculated for alcoholic fermentation which occurs at low temperatures: 16/18°C. It is then left a few days in contact with the lees and eventually filtered to prevent malolactic fermentation.
